Last week, I was pining away for those warm summer, sunny days. I flipped through my recipe book & came across my key lime cheesecake. Nothing like a dash of citrus to give you that warm, glowing feeling inside. It was so good that my oldest son declared he wanted me to make him this for his birthday in June as opposed to a birthday cake! Teenagers tend to realize when something is that good, so I thought I would share the recipe! =)
Key Lime Cheesecake
6 honey graham cracker rectangles
(1/2 cup finely crushed)
2 Tbsp. butter, melted
1 tsp. sugar
1 small box of lime Jello
3/4 cup boiling water
1- 16 oz. cottage cheese
1- 8oz. fat free cream cheese, softened
1- 8 oz. tub of cool whip
2 key limes cut in wedges
- In small bowl combine graham crackers, butter and sugar. Press crumb mixture in the bottom of a 2 quart glass baking dish. Refrigerate while preparing filling.
- In large bowl combine gelatin & water. Stir until gelatin is dissolved ; set aside.
- In blender or food processor combine cottage cheese & cream cheese. Cover and blend or process until smooth, stopping several times to scrape down sides. Whisk 1/2 cup of the cottage cheese/cream cheese mixture into the Jello. Whisk in remaining cottage cheese mixture until smooth. Fold in whipped dessert topping. Spoon filling over chilled crumb mixture.
- Cover and refrigerate 8 hours or until firm. Garnish with lime wedges or twists. Serve!
