Pineapple Peach Pina Colada Smoothie~ Tuesday’s Table

Welcome to this week’s edition of Tuesday’s Table. I have a fun little breakfast shake that I recently created to share with you today. Over the years I have found that I am not much of a breakfast person. After years of struggling to find a food that I could stomach that early in the day, I discovered smoothies. It has been a love affair since!

I love mixing up different fruits and yogurt, etc. I have found some really healthy additions that make my smoothies quite yummy and packed with energy. One of my most recent favorites are Chia seeds. Chia seeds are super high in omega 3’s , calcium, protein, and fiber. They help with energy and endurance. As a Fibromyalgia sufferer, that is a much needed boost I need daily. I also love adding Chia seeds to my salads, cereals, baked goods and they are even a good egg replacer!

Chia seeds were once eaten by Aztec warriors on the hunt for food.  They are the richest source of Omega 3’s, they have more Omega 3’s than salmon! Chia’s have more calcium than milk and they are high in iron, potassium, folate, phosphorus and magnesium. A superfood to be sure! I love the Carrington Farms brand that Costco carries. A whole bag lasts me about a year!

The smoothie that I want to share with you today is reminiscent of a Pina Colada. It is like drinking a tropical vacation. =) Both my husband and I love it. We make one of these several times a week. They also make good mid day snacks as a great pick me up. So enjoy a little piece of tropical paradise.  Without further rambling:

Pineapple Peach Pina Colada Smoothie

Makes approx. 4 cups

1/4 cup unsweetened coconut
1/2 medium banana
1 cup frozen pineapple chunks
( I like to cut up fresh fruit and freeze it just for my smoothies)
1 teaspoon of Chia seeds
1 cup fresh sliced peaches
1/2 cup plain Greek yogurt (I prefer Fage)
1 cup of almond milk
2 to 3 drops of pure stevia extract 
handful of ice cubes

Place all of the above ingredients in a blender and blend until smooth. Pour into a glass and enjoy the tropical goodness!

And now a bit of humor from the sunny south…
Wish there were such a thing as healthy bacon. 😉
